Historical Sketch:
From 1837 to 1894, the domestic work including the preparation of
food was done by faculty and students. However, in 1894, C.E. Green
was appointed as an assistant in the home department and in 1896,
a woman was hired to wash dishes. These appointments were made in
response to the increasing demands of the domestic work program
on faculty and students. Office of the Steward was established in
1935. In 1967, Office of the Steward became Food Services. In the
fall of 1993, the name was changed to Dining Services.
Description of Records:
The records of Dining Services consist of files from the Food Service
office. Within these records are manuals, newspaper clippings, memos,
and letters. There are also annual reports dated from 1969 to 1970
and 1990-1992. The reports note management changes, workshops, menu
developments, statistics on food consumption and costs. Also, there
is correspondence dated from 1939 to 1969, consisting mainly of
memos. These discuss such things as types of food service, budget
projections, and hiring of employees. There is information on Treadway
Inns Corporation (a food service vendor), dated from 1956 to 1968.
These records also contain informational packets, job descriptions,
and memos, dated from 1973 to 1985.
