Cranberry-Citrus Relish
This relish goes great with holiday roasts. My Babchie used
to make this every Thanksgiving when she hosted the family meal.
At 91 she doesn’t make dinner anymore but each grandchild
still receives a jar to share with family.
The recipe can easily be doubled or tripled.
12 oz. frozen (or fresh) cranberries
1 small grapefruit, peeled and white pith cut off
1 orange, peeled and white pith cut off
1 cup sugar
¼ cup chopped red onion
2 tablespoons fresh chopped mint
1 teaspoon minced fresh ginger
1 teaspoon grated orange peel
- Rough chop the cranberries and add to a large stainless
steel bowl.
- Dice the grapefruit and orange. Add to the
bowl with the remaining ingredients.
Allow to sit for several hours or over night.
Best served at room temperature.
Makes about 3 cups
