Through the Center for the Environment Summer Fellowship, I was able to fulfill a comprehensive independent research project that integrated my passion for food and my background in organic farming with questions I identified through my CST major. For nine weeks I took part in a self-designed, WorldWide Workers on Organic Farms (WWOOF) work exchange at small farms in the Tuscan and Emilia-Romagna regions of Italy. To inform my vocational goals, I learned how to make cheese, herd goats, and make sourdough bread from several small-scale producers. To inform my CST capstone course, I recorded the farmers’ oral histories, as well as their experiences related to food production and industrial agriculture. I began with a one-week intensive language course in Rome to help ground me in the Italian language, further facilitate my inquiry, and deepen my learning experience.
